The Process

The many ingredients in Genius Gin are balanced and treated with individual care. Our incredibly detailed two-part “Hot and Cold” process caters to the delicate and unique characteristics of each botanical as exposed to different temperatures.

First, we ferment and create a low % alcohol (essentially a beer), to be redistilled for purification and strength reasons. This first run is prepared through our beautiful 6-plate copper still. The resulting product is then infused at room temperature with the first half (the Cold) of our proprietary botanical blend for over 72 hours. (this blend includes: Elderflower, Lavender, Lime Peel, Angelica Root, and more….) When ready, this fragrant and colorful mix is distilled again (the Hot) in a process that pushes vapors through our remaining ingredients enclosed in a basket within the still. These heat activated ingredients include: Juniper, Cardamom, Coriander, and a few others..) Each “Hot” preparation involves the toasting and muddling of all the fresh ingredients. (think “made to order” Gin).

The resulting flavor is not only beautifully balanced, fragrant, earthy, and easy to sip, but it’s also the most accessible Gin you will ever taste. We don’t take shortcuts and we don’t take your tastes for granted because you deserve the best Gin possible.

Genius Gin - Navy Strength

Genius Navy is bottled at 57% abv -114 proof-; the historical proof carried on British Royal Navy fleets. Due to its low water content, this was an ideal proof for voyages since it could be safely spilled on the ship’s gunpowder without rendering it unusable. Genius Navy intensifies the botanical brightness and depth of Genius Gin while also making cocktails more flavorful. The finish is superbly clean and textured, providing a mouthfeel more similar to bourbons than a gin. Genius Navy is perfectly sippable-especially for whiskey and cognac drinkers- but also has the versatility to balance your favorite Gin cocktails. Genius Gin - Standard Strength

Genius Gin -45% abv 90 proof- is a unique approach and respectful homage to the classic London Dry variety. With a pastoral depth and fresh crispness, Genius Gin utilizes a wide array of familiar -and some unfamiliar- botanicals. The first notes reveal a breath of juniper perfectly married with cardamom and coriander. Then, a silky mix of lime peel, lime leaf, and lavender coat the tongue like a fine bourbon. We strove to create a warm and open set of flavors that play well with cocktails while also being aptly suited for drinking neat. Genius Gin presents a truly new blend of flavors and sensations. Whether paired with the tartness of a gimlet or the richness of a perfect martini, you will be enamored with Genius’ smoothness and beauty. Available in 750ml.

Oaked Genius gin

Oaked Genius Gin is an experiment and the result of a few mistakes. Innovation is often born out of error, and Oaked Genius Gin is entirely unique. Containing the same botanical blend as Genius Navy Strength Gin, the batches are proofed to 50% ABV and steeped with medium toast French Oak chips for 6-8 weeks. Whereas many Gins with color have been barrel aged or rested, Oaked Genius Gin is an exploration of deep oak flavor and its relationship with Gin botanicals. There are no additives or colorings used. The resulting color is stunning and the flavor offers a rich texture similar to a Cognac. With vanilla, baking spice, and caramel notes, Oaked Genius Gin is a wonderful remedy for the winter or a brilliant substitution for your favorite aged spirit in a cocktail. Old Highborn Texas Dry Gin

Old Highborn Gin is a traditional dry spirit with a Texas flair. OHB is, unlike most Gins, pot distilled to retain deep flavors and oils. The eight perfectly balanced botanicals are deliciously bright and earthy. A perfect accessory to any fine cocktail, OHB tastes both familiar and unique. At 47% ABV, the crispness of botanicals shine through citrus and aperitifs delicately. The final recipe took eight batches and resulted in eight botanicals designed to hit across the palette perfectly: cinnamon, tea, citrus peels (both fresh and dried), juniper, and more.
